Ingredients

Salad

  • 300g French green beans, frozen or fresh
  • 1 tsp crushed garlic or garlic paste
  • 1 tbsp olive or sesame oil

Protein boost. Choose from

  • Cauldron tofu pieces, half a packet
  • Lightly steamed fresh soya beans (edamame), approximately 1 cup
  • Black beans, ½ a tin rinsed and drained

Dressing

  • 3 tbsp vinaigrette plus 1 tbsp soya sauce (use tamari if you want a GF option)
  • 1-2 tbsp ready-toasted seeds, mixed or an individual type, eg sesame, sunflower etc

Bulk it up?

  • Add cooked wholegrains eg quinoa, mixed grains, brown rice – home-cooked or from a packet
  • Pumpernickel or other quality bread

Instructions

  1. Steam or microwave the green beans until just done then cool under the tap. If using the soya beans, cook these with the French beans now also.
  2. If using the tofu option, use a non-stick frying pan or wok to heat the oil and quickly fry the garlic and tofu pieces. Remove from the heat, toss the cooked beans in the mixture and drizzle with the dressing and soya sauce.
  3. If using the black bean option, just add them cold to the salad.
  4. Sprinkle the seeds on top and eat immediately. Alternatively, place in a plastic container and take to work.
