Quinoa & Apple Porridge

This makes a protein-rich and tasty alternative to regular porridge – gluten and wheat-free too! It can be made the night before to save time in the morning.

Ingredients

  • ½ cup quinoa, rinsed and drained
  • 1 cup water
  • 1 apple
  • ½ lemon (or 2 tsp bottled lemon juice)
  • Cinnamon to taste – ½-1 tsp
  • Handful raisins
  • Optional – syrup. Choose from barley malt, brown rice, agave, date or maple

Instructions

  1. Put the quinoa and water into a small saucepan and bring to the boil. Cover and simmer for around 15-20 minutes or until the quinoa is tender.
  2. Just before the end of cooking time, grate in the apple and cook for half a minute. Grate the lemon and add this zest plus a little lemon juice to taste. Serve in bowls with a sprinkle of cinnamon and a drizzle of syrup if using.
