Super-fast Scrambled Tofu

So fast, easy and delicious! Silken tofu is super healthy, full of protein and other goodies as well as making a very creamy scramble. We give you the basic recipe, which is great in itself but feel free to improvise; see our optional extras suggestions in the ingredients section.

Look out for brands like Blue Dragon, Morinaga, Yutaka, Clearspring and Morinu, all in tetrapacks. Fresh silken tofu is made by Taifun and Oriental stores usually sell a range of fresh and tetrapacks. Pulmuone brand is a fresh tofu range that is very good

Ingredients

  • 1 tsp vegetable oil
  • 1 clove garlic (peeled and crushed) OR ½ -1 tsp garlic puree
  • ½ packet of firm silken tofu (approx. 175g) or firm tofu
  • 1 tsp tahini
  • 1 tbsp tamari (GF) or shoyu
  • 1 tbsp nutritional yeast flakes
  • ½ tsp turmeric

OPTIONAL EXTRAS: eg sliced avocado; sliced tomato; lightly cooked cherry tomatoes, super sprouts, chopped peppers or chilli; rocket or kale…

ALL KITTED OUT
Small knife and garlic crusher; medium saucepan; scissors; measuring spoons; cooking spoon

Instructions

  1. Gently fry the garlic in the oil for about 30 seconds until lightly golden. Don’t let it burn.
  2. Add the all other ingredients and mix together. Try not to break the tofu up too much but make sure it’s well stirred.
  3. Heat to warm through for approximately 3-5 minutes and serve immediately.

Optional extras / notes

  • Works as a light meal on its own or as part of a bigger meal, eg a vegan cooked breakfast
